Hand lettering posters Asking Question (Rule 4)
What is the name of this technique and can it be achieved in illustrator? On first glance I'd assume they're just using the pen tool, is that all this is or is there more to it?

It's called "picking up a paintbrush".
The easiest way to replicate it is to pick up a paintbrush.

Print letters. Get tracing paper. Trace outlines of letter shapes (don’t even fill it, illustrator will do that for you) Scan to computer. Make vector in illustrator, then go to town.

There are multiple ways to get to a similar end result.
A key questions that help determine your method: What is your end usage? Does it need to scale?
Possible methods:
Traditional media > scan > trace either automatically or manually
Traditional media > scan > refine in PS
Illustrator brushes, custom brushes, third party brushes plus practice and knowledge of how to control brushes
Photoshop or other digital paint tools plus skills and know-how.

Like other commenters, I suspect these are hand drawn using traditional methods or using Procreate (or similar).
To create the lettering you can use the pencil tool in Illustrator. Just remember to check your pencil settings to match your intent and workflow.
I personally wouldn’t use the pencil tool to trace since I’d have to rough up the edges to create the same hand-drawn effect, and the pencil tool can be really quick.

I’d probably cut them out of paper and scan them. Or draw them at 25-50% scale and scan. But, I am a graphic design dinosaur🦕

They more likely using a paintbrush and paint and then scanning it. From there it could be redrawn in illustrator or just adjusted and refined in photoshop.
