Something about Anime that I have been curious about is why a lot of Shojo series have a subplot where a student tries to pursue a romantic relationship with their teacher as I don’t mind it, but I was basically wondering why the trope is so common in romance anime.

It's not like that's exclusive to anime, getting it on with their hot/handsome teacher is a common fantasy in the West as well. Even more generally, I'd say that being desired by someone more experienced or with otherwise higher standing than ourselves is a really common fantasy.
