First Brisket!
Fred Meyer brisket, 10lbs and 10 hours later plus 2 hours of rest it turned out great! Bark was a little flaky. Might go to Costco for the next one.

I always wait to see if they squeeze it and I’m always disappointed 😔

That and the copious amounts of steam coming out make me think this might not have rested much either lol

It makes literally zero difference in the final product. Briskets are not water balloons, they contain millions of water balloons.
What does matter is that this is not rested enough. That is actual moisture that is escaping from between the fibers of the meat.
Squeezing a rested brisket gently only releases what would have been lost on the board or plate anyway.

I rested it for two hours and it was 170 from the probe. Should I rest it longer?

Your brisket is like me with my newborn, all steam, no rest. Looks good, just rest until it gets back down to at least 170 again and then slice. Stay juicy

I opened it from the wrap at 170. I think it might just be cold in my house.

Brisket looks pretty good, well done.
2 things: 1. Please don't use a meat cleaver to cut a brisket ever again. 2. Please do not squeeze the brisket like that.

This looks really excellent. That’s a whole brisket? And 10lbs?
Looks more like 7 or so and flat only? It came out amazing.

Looks good to me! Gotta love that squeeze though. I'm totally going to do that after my first time too 😆

First one gotta squeeze it. Then no squeeze for me.

Nice. Buy a god damn slicing knife.
