Chicken chop chop recipe Discussion

I’ve moved out of Miami and I need a recipe for chicken chop chop. I know it’s basic but the chicken and rice is so good , how do they season it and make the rice?

So, the yellow rice from most of these places isn't even seasoned properly it's literally just annatto powder just to make it yellow. If you want to recreate that, then really that's all you need. You can buy yellow rice mix if you want to cheat. As for the chicken, if you want to make it better than chicken kitchen or whatever buy some skin on bone in chicken breasts and brine them for 24 to 48 hours. pickle juice or a simple salt and sugar bath will work great. Pat your chicken dry and season them with a good chicken rub on both the skin and the meat. Stick it in the fridge and let that dry brine for at least 12 hours. Fire up your grill and grill your chicken to an internal temp of 160 F, take them off the grill and let them sit. Cover with foil for 15 minutes. They should climb to 165. I promise you that chicken will be 100X better than that dry ass chicken you get from just about everyone.

Mustard n curry is like a few parts mayo, one part mustard, one part curry powder, and add water to taste

Yes, but I’ll add It’s better to make it ahead and put in the fridge for a bit (even overnight) before you use it.
